Day 1

Day 1 was pretty uneventful, which is what I expected for today.  However it is only 7PM and I've started craving a little something sweet...A nice chunk of chocolate dipped in peanut butter would be really good about now.  BOTH of which are off limits.  A piece of fruit will taste like chocolate ~ right?  :o)

Breakfast
This is a pretty typical breakfast in our house.
Omelet filled with lots of yummy veggies cooked in coconut oil.
1/2 a fresh mango
Coffee, BLACK.  That part, not so typical, but not bad at all.

Lunch
Lunch was delicious ~ Tuna & Salmon Sashimi ~ the hard part....WITHOUT soy, I did put wasabi on it, but it is not the same without the salty goodness of soy.  I have coconut aminos on order, and I am hoping  that will be a good substitute for soy. OH - I totally forgot to check the ingredient list on the wasabi and when I did I it was all in Japanese, so I started Googling.  Did you know what there is REAL wasabi and there is fake wasabi?  The fake stuff has green food coloring, horseradish, starch & mustard in it.  The real stuff grows naturally along stream beds in mountain river valleys in Japan & fresh wasabi leaves can be eaten. (Thank you Wikipedia!)  I'm still not 100% sure that the wasabi I ate was clean, but I think it was.  It is the expensive stuff that came from Japan.
Anyway, I also ate 1/2 an avocado and drank water....

Dinner
Dinner. YUM.
One of my favorite things to make is Grilled Stuffed Portobello Mushrooms. The only difference today is that I didn't add the yummy deliciousness of feta cheese.  I'll post the recipe soon and link back soon.
Grilled chicken - simply made with salt & pepper then tossed on the grill.
Fresh steamed broccoli

Day 1 done....................

HOLD on a minute.  Remember how I started out saying I would really like a chunk of chocolate dipped in peanut butter?  Well I didn't cave.... I went in the kitchen looking for a nice piece of fruit and this is what I ended up with:
Bananas & blueberries sautéed in a little coconut milk.
HOLY GOODNESS.
The kids devoured it and ask for more.
Boy 2 even suggested that next time I add strawberries.
I think I just might do that next time.

The food you eat either makes you more healthy, or less healthy.  Those are your options. ~ From It Starts With Food.

Way to go, Trish!! Sounds fantastic! Oh, and I'm a black coffee drinker...after I started doing this years ago, now I don't often really enjoy the sweetness of "froo froo" drinks from coffee shops! You can do it!! And when I get there, we'll sit down for coffee...BLACK!!
