Day 2 started off fine - I woke up about 5:15AM without an alarm clock which is about 15 minutes earlier than normal for me. Headed downstairs and did my thing...(my thing is COFFEE!)
Anyway, breakfast was normal - I made these little fried omelets in a pepper ring. I make these every once in a while so I am finally at the point where they aren't falling apart and they actually stay inside the pepper ring. Start with a little coconut oil in the pan, sauté a little spinach, tomatoes and whatever other goodness you want to put in your pepper ring. Put your sautéed goodness in the bottom of your pepper ring - make sure your pepper ring is about 1/2 an inch thick so the egg will stay put - add the egg and fry. When it has cooked enough flip it over & cook some more.
Serve with a nice cup of black java & 1/2 an avocado!

Around 8AM I noticed my energy level was low and I REALLY did NOT want to go work out. About the same time I got an email from Hubby saying his energy level was a bit low as well but he thought maybe a lunchtime work out would help. Since it was happening to both of us we assume it is the diet, after all they do call Days 2 & 3 "The Hangover". I'm glad it is just low energy for us so far, as many people have felt true hangover feelings - not that I know what those feel like. :o)
I worked out about 9AM even though my body was begging me not to, but about 45 minutes into my work out I felt a strain in my calf...it felt like I was getting a Charlie-horse so I stopped for a few minutes, stretched it a bit and continued my workout. That wasn't a great idea, it just kept getting tighter and tighter with lots of pain so I had to stop - I think I pulled a muscle as I have not been able to put weight on it all day. Grrr.
I worked out about 9AM even though my body was begging me not to, but about 45 minutes into my work out I felt a strain in my calf...it felt like I was getting a Charlie-horse so I stopped for a few minutes, stretched it a bit and continued my workout. Lunch was a salad with last night's left over grilled chicken. I made a creamy avocado dressing (the green blobs on the salad) and although it was good I need to tweak it a bit before I give you a recipe.
Around 2PM I started crashing & turned on the espresso machine. At 2:20 I got a call saying my daughter was hurt - and was being cared for at the CDC. I raced over gimp leg and all to take her to the ER. Adrenalin was pumping so my energy crash was over for a little while. No worries, she is fine. There was way more blood than necessary (she is such a drama queen! :). She fell off her scooter and her friend couldn't stop in time and ending up running over Girls fingers. In the end there were no broken bones or stitches. THANK GOODNESS.
While I was in the ER a sweet nurse (I think it was a nurse) popped her head in and said "You have no idea who I am but I follow you and I love your blog"! Ahhhh, thanks for that!
Another cool thing, I had a different nurse ask me if I needed to be seen for my leg - she noticed I was limping. I love it when nice things happen - especially in the middle of insanity.
When we finally got home about 4:30 and I was crashing again - good thing the espresso machine was on. :o)
