Tuesdays with Trish - Chicken and Beer!

Fried chicken has always been one of my favorites.  I loved those nights when mom would stand over the stove for hours frying up chicken in her big ol' cast iron skillet.  OR on Sunday after church when everyone would come over and we would stop at Grandy's Fried Chicken on the way home.  There was nothing like it.

UNTIL Korea.
Koreans LOVE their chicken.
But you can't just have chicken here, you have to have beer with it here too. 
Who knew?
OH, and Korean Fried chicken is THE BOMB!! 
True story.  Again....who knew?
I might even like it better than mom's fried chicken, but please don't tell her I said that.  Wait a minute, she would probably like that.  I can't imagine she enjoyed standing over that hot stove cooking fried chicken for hours.  On second thought go ahead and tell her.

For lunch bunch several weeks ago we went out for Chicken and Beer.  The place we were going to go was closed for some reason or another, so we walked around just a bit and found this place.  Kang Jung Box.

We ordered several different types of chicken.  My favorite type here is the spicy soy/garlic.  With a Cass beer of course.

Regular fried chicken and some shrimp on the side for good measure.
Notice that they cut their chicken up differently.  They cut breast into at least 3 pieces.

To drive here from post:
Exit Commissary gate - turn left
Stay right - Turn right onto Itaewon Street 
Turn left on Daesagwan-ro - this street has a light. 
(You will be going through a street with many lights and lots of people walking - near Hannam Village)
Kang Jung Box will be on your right hand side just before the crazy 4 way stop....
(Sorry, that is the best I can do on directions.)

Smoky Beef Soup

Have I mentioned that I LOVE FALL?
It's true, I do.
I love all things that come with fall....cooler weather,
snuggling with the one I love, beautiful colors, PUMPKIN and soup!
A few days ago I started craving a good steak soup, you know, a good hearty one.  Kind of like the one they sell at Texas Land and Cattle - the smoky sirloin steak soup or whatever it is called.  Not that I have had that soup in like FOREVER.  Anyway, it was on my mind so I decided to try to recreate it.  I'm not sure how close I am to the recipe, but I gave it a try and it turned out FABULOUS!  It got a thumbs up from every.single.person in our house - and that my friends is rare.

3 lbs of stew meat (whatever you fancy...I used sirloin)
1.5 tsp liquid smoke
lots of fresh crushed pepper
1 onion - diced
6 cups of beef broth (I like to use homemade to make it clean/paleo)
1 - 15 oz can diced tomatoes
1 small package of baby carrots

Toss stew meat (cut into bite size) & onion in a large dutch oven and brown the meat, while browning add liquid some and LOTS of crushed black pepper - just keep turning that mill!   Once meat is nice and brown add 6 cups of  beef broth & can of diced tomatoes. Bring to a boil and cook for about 10 minutes.  Add carrots.  Turn heat down and simmer for 1.5 hours.

**I really think this would be a super easy crockpot meal as well....just toss all ingredients in a crockpot in the morning, cook on low 6-8 hours.
  If you try it let me know...If not when I try it I will let you know! :o)

**I served baked potato and baked sweet potatoes on the side.  You can always throw potatoes in the soup...that's how they do it at Texas Land and Cattle.  :o)

4th Annual Back To School Water Balloon & Popsicle Party!

OMGoodness. Are you kidding me? We had MORE water balloons and Popsicles than last year? How can that be?  Our party at least doubled in size.  With more than 5,000 water balloons, 1,600 Popsicles this party was total INSANITY.

Kids across the neighborhood started asking me about the water balloon and Popsicle party BEFORE school was even out last year!  Several of them told me they bought their water balloons early so they could secure their spot at our party.  It warmed my heart to know how much all the kids (including mine!) were looking forward to this years back to school bash.  I had a few kids tell me "I can't wait, but I can wait....oh it's so hard.  It's such a fun party, but we have to start school 3 days later."

The rules were almost the same as last year, however we did add a little kid area & we talked about Popsicles.

I had all the kids sit in the grass while parents strategically placed balloons around the play equipment and I went over the rules:

#1 - you must sit here until I tell you to go
#2 - you must eat as many Popsicles as you can WITHOUT throwing up
#3 - anyone over the age of 5 is not allowed in the little kid section 
#4 - no water balloons to the face
#5 - do NOT throw balloons at parents with cameras
#6 - after the water balloon fight eveyone that participates MUST help clean up broken water balloons!
#7 - HAVE FUN!

I had a team of paparazzi on one of the balcony's capturing photos this year.  MANY of the photos in this post are from my good friend and neighbor jrstinson.  She does amazing things with her camera!  I feel bless to have so many amazing shots from her!  Thanks J!
