Egg & Veggie Muffins

We love breakfast.
We love veggies (well, most of us do...)
We love muffins.
And since muffins aren't really jiving with us right now I decided to make a special kind of muffin.
Egg & veggie muffins.

Chop up whatever veggies you have on hand.
I used
mushrooms
green peppers
tomatoes
spinach

Oh, and some ham.
I know ham is not a veggie, but just chop some up too.

Heat a little coconut oil and sauté those veggies (and ham) right up.

Oil the heck out of your muffin pan, because this recipe STICKS.  And it sticks VERY WELL.  Not that I would know.
Put veggie mixture in the bottom of the muffin cups.

Then fill with scrambled eggs.

Bake at 350 for about 15-30 minutes....I can't remember. 
Just check on them and when they look like the ones in the next picture take them out.

Ranchero Sauce for Huveos Ranchero! The Sauce is Clean Eating - The Rest, Not So Much....

You had me at:  "Would you like to come over for breakfast?"
Just looking at it made my mouth water.
After my first bite I about fell off my chair.

Dalia is one of the best cooks I have ever met.  She is AMAZING, but never gives herself much credit.  She is one of those cooks that just does it.  No measuring required, she just cooks (while bare foot, dancing & lauging!).  So this recipe isn't an exact science as I was taking notes while watching her as we laughed and talked, but I'll share with you what I do.  My ranchero sauce is not nearly as good as Dalia's.  

Ranchero Sauce - which by the way is Whole 30 approved - clean living baby! (However after the ranchero sauce all bets are off.)

4-5 cups of water
2 pablano peppers
4 medium size tomatoes
2-4 jalapenos depending on how spicy you like it
1 medium onion
1 bunch cilantro
salt & pepper to taste
Red pepper flakes to taste (only if not spicy enough for you!)

Cut peppers and onions into large pieces and then toss all ingredients (except the salt, pepper & red pepper flakes) in a pot - leaving tomatoes whole and boil the heck out of it.

Once everything is nice and mushy turn off heat and blend with an immersion blender till nice and smooth. 
Add salt and pepper to taste.  And BAM, there it is......Ranchero Sauce! 

Ranchero sauce saves in the fridge for at least a week - maybe longer I'm not sure as it never last longer than a week in my house.  Serve it over anything that needs a sauce.  :o)

To make Huveos Ranchero:
fried Corn tortillas
refried beans
fried egg
cheddar cheese
ranchero sauce
lettuce
tomato
avocado

Layer beans on fried tortilla, add fried egg, cheddar cheese & lots of ranchero sauce.  Server lettuce, tomato & avocado on the side.

Pancakes - Whole 30/Paleo Style!

It wasn't until Day 29 of the Whole 30 when I finally made a pancake worth eating.  And I happened upon them by mistake on Day 27 when I made them as 'tortillas' for a dish called 'Pork Avocado Cream Enchiladas' created by Julie over at PaleOMG. So, I take absolutely no credit for these, OK, well maybe for changing them from a tortilla to a pancake...BUT I didn't change the ingredients or create them, so take it for what it is -  a tortilla pancake Paleo sort of thing.  If you are looking for a 'TRUE' pancake recipe, don't make these.  If you are looking to heal your gut, lengthen your life, feel better all around (no, I'm not a doctor and I have no proof these will lengthen your life - don't sue me) then make these and eat them every.single.day.  :o)

Even my kids like these.

6 egg whites
3 TBL coconut flour
6 TBL coconut milk
1/4 tsp baking soda
Put everything in a bowl and mix away all the lumps! 
I used an immersion blender....

Toss a little coconut oil on your hot griddle and cook till bubbly, like this:

Make sure they are nice and bubbly before you turn them or you will get a clumpy mess.

Bam, a plate full of piping hot Paleo Pancakes, just like Momma used to make....or not.  :o)
Eat them just like this with some pure maple syrup, or if you are doing the Whole 30 check out the next picture...

Portabella Breakfast on the Grill.....

Yesterday morning as I was paroosing through Facebook a friend posted about a savory breakfast pie that was filled with all things I love.  I had all the ingredients, but didn't want to wait as long as it would take to make, so I improvised, and I am so glad I did.  I'm also glad I made extra as I am about to eat one for breakfast this morning too.  :o)

This was super easy and came together rather quickly.

Portobello mushrooms, cleaned and stems removed and rub the bottom with olive oil (this to prevent sticking on the grill - I also sit them on a sheet of foil on the grill.)  
Fill with a layer of spinach
Add a layer of sliced tomatoes - good, fresh, in season red juicy plump tomatoes!
Toss some crumbled (& cooked) breakfast sausage on next (I used homemade - so much better for you and I promise to post the recipe soon...I'm so bad sometimes.  I know I've been promising for a long time.  THIS WEEK I tell you, THIS WEEK!)
Grill for about 10-15 minutes

Next up scramble up some eggs.
**Toss in some Feta. I like the tomato/basil feta - it is my favorite! 

Next...I tried to pour it directly on top of the mushrooms, but I realized very quickly that would not work and I would have a GIANT mess in my grill SO I cooked the eggs just a little on the stove top - just enough to where they hold a little form and would not slip off the mushroom.  This worked beautifully. 

I filled those mushrooms and continued the cooking process on the grill for another 10 minutes or so until the egg was thoroughly cooked.

HEAVEN.
I loved it.
Hubby enjoyed it.
The kids turned their noses up.
They don't know what they are missing.
It doesn't matter -
MORE FOR ME! 

**To make this recipe Whole 30 compliant leave out the feta.
You could also make this in the oven if you don't have a grill.
Cooking at a temperature of 400.
PS....Great, now that same friend just posted a picture of homemade chocolate cake with homemade chocolate frosting......

Tuesdays With Trish ~ Pancake Story

This past week we went to A Pancake Story, a cute little pancake story. 
I love the atmosphere.

A Pancake Story is a tiny little cafe Hannam-dong that can hold maybe 20 customers when the patio is open!  In April of 2010  10 Magazine ranked them as the  #1 place in Seoul for brunch so I was excited to head out and try them.   However I need to learn to lower my expectations.  This place was good, but not someplace I would RAVE about or even go back to when there are so many other places in the city that are way better....like Bim Bom, which is only 2 or 3 doors down.

Crispy nut pancakes with chocolate chips.  Jennifer ordered this and her review on Facebook was:  (taken with her permission) 
"Gave a Pancake Story a try today in Hannam-dong . Cute place, great company, but the food did not make my taste buds do back flips. The pancakes needed vanilla and the nuts (stuffed) needed to either be slightly candied or the peanuts swapped for pecans. Thank goodness they allowed some chocolate chips to be added. :) I also had two over medium eggs, they were just eggs nothing fancy. The peach iced tea was tasty."

As for me, I ordered cream cheese and mozzarella pancakes (for 7,300 won), a side salad (I don't' know how much it was) and 2 eggs (2,000 won) over medium.  Personally I was highly disappointed.  The salad was lettuce a cherry tomato and a few sprouts - I ordered the dressing on the side - look at the picture.  The eggs were cooked over HARD not over medium and the pancakes were a total disappointment.  If you want cream cheese and mozzarella pancakes, which I think everyone should try at least once I recommend going to Butterfinger Pancake and have theirs!

Bim Bom Natural Kitchen & Cafe

Last Sunday Hubby and I had a date morning since we missed our weekly Saturday night date. I had researched a couple of places and it was a toss up between Pancake Story and Butterfinger Pancake.  We picked Pancake story based on distance and good solid driving directions.  It is just too bad that when reading reviews I did not notice that Pancake Story is CLOSED on Sundays.  BUMMER!  So we did what any good couple would do, we walked down the street about 3 store fronts till we found Bim Bom Natural Kitchen and Café:

And just our luck, they have Best Brunch!
(Even though I wasn't sold at this point...I had spied a little Vietnamese place down the street that was calling my name, however Hubby was pretty set on eating a traditional breakfast - I could have had a bowl of Pho and called it breakfast and lunch :.)

Once we were inside any thoughts I have of Pho went out the window and I was pretty sure I was going to love this place.
We ordered the Bim Bom's Special Plate for 42,000 won:

AND LOOK HOW CUTE it is!
It came out on this 3 tier cake plate.
Mostly because it had to, our table was *tiny*, as were all the tables. 
I think the restaurant sat MAYBE 15 people comfortably.

This was my FAVORITE!! 
Before sunrise crepe.
HEAVEN.
Crispy crepe on bottom, bacon, over-medium egg with fresh arugula and the perfect amount of balsamic glaze.

My second favorite and close runner up was the Eggs Norwegian.

And the Fruit French Toast won Hubby's vote.
Korean style Milk bread French toast cooked till the edges are a little crisp with sautéed strawberries and bananas, toasted almond slivers, drizzled with strawberry syrup and sprinkled with powdered sugar. 
You really can't go wrong with that.

This is a great little place where they cook everything fresh to order and if you sit as close as we did you can watch them make it all for you.  :o)

Blueberry Muffin Steel Cut Oats - Crockpot Style!

I will try to do better this week.
No extra grease, no need to call the cardiologist today.
Remember when I posted Apple/Cinnamon Steel Cut Oats? 
You all loved them so much I thought I would give you my next favorite crockpot style steel cut oats.
Blueberry Muffin.
Oh Yum.
I think I might love these better than the Apple Cinnamon.
For real.
Although my children don't really like blueberries.
Can you believe that?

It is basically the same as the Apple Cinnamon recipe with only minor differences.

1 cup steel cut oats
2 cups blueberries (fresh or frozen - I used frozen)
2 cups of your favorite milk - I use skim
1 1/2 cups of your favorite water :o)
4 TBL brown sugar
4 TBL butter
3 TBL 100% pure maple syrup (you can do this with only 2 TBL, but we like it sweet!)
1 TBL flax seed (optional of course!)
1/3 TSP salt

Toss everything in your crockpot (I didn't even stir it!)
Cook for 7 hours on low.

Wake up to a beautiful crockpot full of goodness.

Add a little brown sugar, granola and fresh blueberries on top and you have a perfect little breakfast!

***I put left overs in individual serving size dishes in the fridge. They last for about 5 days.  
To heat add a little milk, give a little stir and stick in the microwave.
They also freeze well!

Sausage Gravy & Biscuits

I'll just throw this out there for you....
Sausage gravy and biscuits are BAD FOR YOU.
All the grease from the sausage and then the extra grease that you add to the sausage to make the gravy is certain to start the clogging process of your arteries.
I put so much butter in my biscuits you should have your cardiologist on speed dial.
BUT if you serve fresh fruit or a green smoothie on the side, all is forgiven.
Right?
OK, maybe not.

Just don't have this often and you will be OK.
Maybe.
I'm not a doctor.
Don't take me at my word.

All I know is that every once in a blue moon my family (me) wants to have a little badness in our lives.
At least we aren't out committing crimes against the world.
Just our own bodies.
Plus Sausage Gravy reminds me of childhood.
Momma use to make this.
Only she made it with Owens Hot Sausage, as this is the ONLY sausage my Daddy liked.
If I could find Owens I would use Owens.
However I haven't lived anywhere that carries Owens for a long time.
I have to settle for Jimmy Dean.
Don't get me wrong, Jimmy Dean is not bad, he is just not Owen.
The Recipe:
Kind of- all measurements are APPROXIMATE.  You will need to judge for yourself...add a little more of this and a little more of that per your liking...  Yes, this is one of THOSE types of recipes.  Good luck.

1 package Jimmy Dean Hot Sausage (use Owens if you can find it)
4 TBL vegetable oil
3 TBL flour
1 1/2-2 1/2 cups of milk

Cook sausage over medium heat crumbling like so until done.

When sausage is completely cooked move all sausage to the outer edges of the pan.
Add vegetable oil - let it get nice and hot (medium-high heat)
Add flour
With a whisk combine flour and oil until no lumps appear.

Add milk slowly 1/2 a cup at a time whisking with each addition. 
Continue adding milk until the gravy is the consistency you like.

Add salt and pepper to taste.
Easy as that.  Really.
I promise.
Give it a try.

And eat salads for the rest of the week to even things out.

Strawberry Nutella French Toast

Remember?  I told you my kids are spoiled.
But how fun is this? 
And keeping with the Valentine theme let's do this HEART SHAPED!

Cut bread into heart shapes - does it help that I used whole wheat?  I think so.
4 eggs in a shallow bowl, scrambled
A little butter
Nutella
Strawberries - sliced

Heat butter in skillet
Dip bread in eggs
Fry bread/eggs in skillet (basic French toast)
A minute or two on each side.

While bread is still warm, spread Nutella over each piece of French toast.
Layer:
Bread
Nutella
Strawberries
Bread
Nutella
Strawberries
You get the idea.

When you serve this to your kids, watch their little faces light up!

Heart in the Middle

Eggs, toast and bacon.
YUM-O.
Please tell me you had these as a child.
What did your mom call them?
We call them Hole in the Middle (today they are Heart in the Middle because Valentines day is coming soon) and sometimes we call them Eggs in a Nest.

OK, let's get to work.

Cut a hole in the center of your bread - whatever shape your little heart desires.  (Get it...hehehe....I'm feeling spunky today! :)

Melt a little butter in your skillet.
Put your holy piece of bread down.
Break an egg and drop it in the hole.
After a minute or two flip your toast/egg. 
Girl likes for me to break the yolk before flipping hers, so I do.
The Boys like the yolk runny, so I leave theirs as is.
Cook until done - whatever 'done' is for you.

Every morning I line their food up just like this on the counter in-between the kitchen and dining room.
