Smoky Beef SoupĀ

Have I mentioned that I LOVE FALL?
It's true, I do.
I love all things that come with fall....cooler weather,
snuggling with the one I love, beautiful colors, PUMPKIN and soup!
A few days ago I started craving a good steak soup, you know, a good hearty one.  Kind of like the one they sell at Texas Land and Cattle - the smoky sirloin steak soup or whatever it is called.  Not that I have had that soup in like FOREVER.  Anyway, it was on my mind so I decided to try to recreate it.  I'm not sure how close I am to the recipe, but I gave it a try and it turned out FABULOUS!  It got a thumbs up from every.single.person in our house - and that my friends is rare.

3 lbs of stew meat (whatever you fancy...I used sirloin)
1.5 tsp liquid smoke
lots of fresh crushed pepper
1 onion - diced
6 cups of beef broth (I like to use homemade to make it clean/paleo)
1 - 15 oz can diced tomatoes
1 small package of baby carrots

Toss stew meat (cut into bite size) & onion in a large dutch oven and brown the meat, while browning add liquid some and LOTS of crushed black pepper - just keep turning that mill!   Once meat is nice and brown add 6 cups of  beef broth & can of diced tomatoes. Bring to a boil and cook for about 10 minutes.  Add carrots.  Turn heat down and simmer for 1.5 hours.

**I really think this would be a super easy crockpot meal as well....just toss all ingredients in a crockpot in the morning, cook on low 6-8 hours.

**I served baked potato and baked sweet potatoes on the side.  You can always throw potatoes in the soup...that's how they do it at Texas Land and Cattle.  :o)

Crockpot Chicken with Gravy - Whole 30 Approved!

Let's get something straight - even if I were not doing the Whole30, I would still make this for dinner.
In fact it is going in our normal rotation (if there is such a thing around here!).
AND - I gave you substitutes at the bottom.

Oh and if you didn't know, I'm doing the Whole30. 
I have a separate area on my blog for daily updates- all month long. 
I am on Day 9 today without 1 single slip up!

Moving on.
I have a Hamilton Beach programmable crockpot (I get nothing from mentioning that - just sayin'!) so I can set it and forget about it. It has a probe so it cooks to the temperature I want - then stops cooking and turns itself to warm.
LOVE THAT.
It is also big enough to fit 2 whole 5 pound chickens in, so I doubled this recipe and there wasn't even a sliver of chicken left.
The recipe:
4-5 pound chicken
2 TBL of ghee (clarified butter which I have to special order)
2 onions, chopped into large pieces
4 green onions with stems, chopped
6 cloves of garlic coarsely chopped
2 tsp tomato paste
1/2 cup chicken stock
Poultry Magic (or your favorite seasoning)
Kosher salt
Fresh ground pepper

I can't believe I didn't know about ghee before the Whole30. I.LOVE.THIS.STUFF.
-Melt ghee in a large skillet and sauté onions, garlic & green onions & saute for 2-3 minutes
-Add tomato paste & sauté another 8-10 minutes
-Toss in poultry magic - I used about 2 TBL
-Deglaze the pan with chicken stock
-Remove from heat

-Put chicken in crockpot and pour sautéed  mixture into crockpot
-Cook for 4-6 hours our until you thermometer reads 165 degrees
-Once it is done take it out of the crockpot and let it rest while you make the gravy!

-De-fat sauce in crockpot by spooning as much out as possible

-Blend with an immersion blender until totally smooth, like gravy
-Add salt and pepper to taste

Watch your family eat it all up!  :o)


*****If you want to make this and you are not on the Whole30 and you don't happen to have ghee in your house, just use butter.  :o) 
Also you can subsitute the chicken broth for wine.

Blueberry Muffin Steel Cut Oats - Crockpot Style!

No extra grease, no need to call the cardiologist today.
Remember when I posted Apple/Cinnamon Steel Cut Oats? 
You all loved them so much I thought I would give you my next favorite crockpot style steel cut oats.
Blueberry Muffin.
Oh Yum.
I think I might love these better than the Apple Cinnamon.
For real.
Although my children don't really like blueberries.
Can you believe that?

It is basically the same as the Apple Cinnamon recipe with only minor differences.

1 cup steel cut oats
2 cups blueberries (fresh or frozen - I used frozen)
2 cups of your favorite milk - I use skim
1 1/2 cups of your favorite water :o)
4 TBL brown sugar
4 TBL butter
3 TBL 100% pure maple syrup (you can do this with only 2 TBL, but we like it sweet!)
1 TBL flax seed (optional of course!)
1/3 TSP salt

Toss everything in your crockpot (I didn't even stir it!)
Cook for 7 hours on low.

Wake up to a beautiful crockpot full of goodness.

Add a little brown sugar, granola and fresh blueberries on top and you have a perfect little breakfast!

***I put left overs in individual serving size dishes in the fridge. They last for about 5 days.  
To heat add a little milk, give a little stir and stick in the microwave.
They also freeze well!

Apple Cinnamon Steel Cut Oatmeal - Crockpot Style

I know, I know - not the best picture, but it is the only one I took. Sorry.
No, I am not done with Cambodia, but I need a break and my friend Lara REALLY wanted this recipe.  I could have given her this link - this is where I found the recipe, but I wanted to have it on my blog.  Thanks to Monica over at The Yummy Life for this amazing recipe!!  I've adapted it a bit, but basically it is the same as her recipe (mine is just a tad more sweet, like me. BAhahahaha!!)

2 apples, peeled cored and cut up into bite size pieces
2 cups of skim milk (you can use almond or soy if you desire)
1 1/2 cup water
1 cup uncooked steel-cut oatmeal (I could NOT find steel cut oatmeal FOREVER - when I did find it, it was with the gluten free stuff)
4 TBL brown sugar
4 TBL butter
1 TSP cinnamon
1 TBL ground flax seed
1/4 TSP salt
cooking spray

Spray the inside of your crockpot with cooking spray.
Toss everything in - give it a little stir.
Cook for 7 hours on low.

When you wake up in the morning, breakfast is ready.

For the kids, I scooped it in a bowl for them, added a tad bit more milk, mixed it up added a little more brown sugar on top and they loved it!  :)

Monica says leftovers freeze well.  I wouldn't know - we didn't have leftovers.
