Aperture: f/2.0 | Focal length: 50mm | ISO: 800 | Shutter Speed 1/60 sec Monday was the first time we were able to check our mail since before Christmas (don't ask...the mail system here in Korea makes me batty) & it was like Christmas all over again!! The Christmas cards we had been waiting for finally showed up (...and we were thinking no one loved us this year....just turns out everyone was running late!) - so many it took me an hour to read them all! How fun is that?! We also received several packages, some we were hoping to receive before Christmas and even a couple of unexpected packages including these SUPER COOL LUNCH BOXES!
If you follow me at all you will know how I LOVE groovy little lunch boxes so when I received these bad boys I was over the moon! Thanks Grandpa Paul! It's true.
I'm Whole 30ing again AND I didn't take any other pictures on today, so you get to drool over my crock pot, pot roast. Go ahead and click here for the recipe if you are so inclined. This is so much more than 'just a waffle'.
This reminds me of 'home', my mom, my siblings, the place I married the love of my life & the place 2 of our babies were born. This reminds me of life long friends, a place of heartache, a place of many, many blessings. This remind me of my good friend Tracey...I can't make waffles without thinking of her. It reminds me of Janice, she gave me the recipe to make this GLUTEN free delicious waffle. True story, gluten free and delicious. And, it reminds me of you. :o) If you have never tried my (OK, really they are my friend Tracey's - I just measured things out for you) pork carnitas you should. I did make them gluten free by swapping the beer to Chicken broth and making sure I used gluten free chipoltes (Goya brand) and serving on corn tortillas and lettuce wraps. (Not pictured) |

Am I insane? Have I lost my mind? After thinking long and hard about it (OK, really I only thought about it for about 12 hours) I just committed to doing a photo a day for a year - a 365 'they' call it. This is going to be SUPER HARD for me. Not the photo part, but the editing part. I mean you guys KNOW how far behind I am. A photo a day - that doesn't sound like much, but in reality, who are we kidding? Anyway I'm going to TRY to post each day, but there will be times I might be MIA for a couple of days, just bear with me and I will catch up. Archives
