I can't wait to give it a try when I have a fully functioning kitchen again.

Umm yes, I tried that.
Starfish are not that tasty. No, you do not eat the hard outer shell, just the mushy brown stuff inside. After I had that first Sugar Queen Cupcake I COULD NOT get those cupcakes out of my head. So, what's a girl to do? Go and buy a dozen of course. It is a good thing I don't live near this cupcake store.
Sometimes things just work out in a weird way. Yesterday I finished posting about our trip to the Philippines where we rang in 2014. If you have been following me for a while you know that on New Year's Eve we ring in the New Year with a day of fondue. This year since we were traveling we missed our tradition - however I promised the kids we would still do it once we returned. I did not plan to coordinate the two blog post, but now that it happened this way it seemed fitting. Last night we celebrated the New Year with fondue and friends! And look....I still have our Christmas cards up. I just can't bring myself to take them down.
Happy New Year! I know - more food. I am much happier with this picture. Paleo Chicken salad. Goodness on a bed sliced tomatoes & romaine. Chicken - baked and diced.
Paleo mayo celery - diced small onion - diced small red grapes - cut in 1/2 walnuts - chopped Salt & Pepper Everything to taste. This is for all my friends that have been asking for the recipe. I finally measured the ingredients out. Kind of. This is Whole 30 approved. I'm not happy with the picture, but I'm posting it anyway. 2-3 TBL MAE PLOY Yellow Curry Paste
16 oz chicken broth 4 Kaffir Lime Leaves 1/2 inch chunk of galangal, sliced into thin slices 1 stalk of lemon grass (cut diagonally up till the purple starts to disappear) 1 pound of chicken (cut up into bite size) 1 cup of snap peas 1 can straw mushrooms (unless you can find fresh! If you can use them!) 1 bunch of cilantro, cut up 1 Japanese eggplant - sliced thin 1/2 cup of coconut milk (full fat from the can) In a large pot combine chicken broth & curry paste - add lemongrass, lime leaves & galangal simmer for about 3 -5 minutes. Add chicken Cook for 10 minutes covered. Add peas, eggplant, cilantro & mushrooms. Cook for another 5-10 minutes (or till peas are the texture you want) Add coconut milk. Heat till warm. Garnish with more cilantro & chili pepper oil. Toss in some thai peppers if you like it spicy. |
Project 365
Am I insane? Have I lost my mind? After thinking long and hard about it (OK, really I only thought about it for about 12 hours) I just committed to doing a photo a day for a year - a 365 'they' call it. This is going to be SUPER HARD for me. Not the photo part, but the editing part. I mean you guys KNOW how far behind I am. A photo a day - that doesn't sound like much, but in reality, who are we kidding? Anyway I'm going to TRY to post each day, but there will be times I might be MIA for a couple of days, just bear with me and I will catch up. Archives
