Day 120 - Happy Birthday Kat!

My beautiful friend, inside and out.
I met Kat the first week I moved to Korea.
2 Martini's in hand I walked to the park to find a friend.
It didn't take long as Kat was sitting on a park bench pretending to watching her kids while she was secretly watching me out of the corner of her eye to see where I where I was going with that 2nd martini.
Instant friends.
Today I was more than happy to plan a little birthday outing for her.

Right after this little show we ask Kat:

"SO.....when was the last time you sat in a back alley in the middle of Insadong - Seoul, South Korea while someone played Happy Birthday to you on an accordion while everyone within ear shot sang happy birthday in multiple languages, while you ate dinner outside over a 50 gallon barrel with hot coals burning by your feet for heat and you checked your coat in a trash bag?"

In the future you ever ask her, she will have a date.  ;)

Paleo Chicken salad.
Goodness on a bed sliced tomatoes & romaine.

Chicken - baked and diced.
Paleo mayo
celery - diced small
onion - diced small
red grapes - cut in 1/2
walnuts - chopped
Salt & Pepper
Everything to taste.

Day 115 - Yellow Curry Thai Chicken Coconut Soup

This is for all my friends that have been asking for the recipe. 
I finally measured the ingredients out.
Kind of.
This is Whole 30 approved. 

I'm not happy with the picture, but I'm posting it anyway.

2-3 TBL MAE PLOY Yellow Curry Paste
16 oz chicken broth
4 Kaffir Lime Leaves
1/2 inch chunk of galangal, sliced into thin slices
1 stalk of lemon grass (cut diagonally up till the purple starts to disappear)
1 pound of chicken (cut up into bite size)
1 cup of snap peas
1 can straw mushrooms (unless you can find fresh!  If you can use them!)
1 bunch of cilantro, cut up
1 Japanese eggplant - sliced thin
1/2 cup of coconut milk (full fat from the can)

In a large pot combine chicken broth & curry paste - add lemongrass, lime leaves & galangal simmer for about 3 -5 minutes.
Add chicken Cook for 10 minutes covered.
Add peas, eggplant, cilantro & mushrooms.
Cook for another 5-10 minutes (or till peas are the texture you want)
Add coconut milk.
Heat till warm.

Garnish with more cilantro & chili pepper oil.
Toss in some thai peppers if you like it spicy.

Day 112 - Dried Prosciutto

My favorite new snack.

Preheat oven to 200
Place thin slices of prosciutto on aluminum foil and bake for 20-30 minutes or until desired crispiness.

Store in a zip-lock bag, unless you are like me and eat it all in one sitting.

I always decline.
Next time I'm going to take them and try to make fish stock.
She will be SHOCKED.

    Project 365

    Am I insane?  Have I lost my mind?  After thinking long and hard about it (OK, really I only thought about it for about 12 hours) I just committed to doing a photo a day for a year - a 365 'they' call it.  This is going to be SUPER HARD for me. Not the photo part, but the editing part. I mean you guys KNOW how far behind I am.  A photo a day - that doesn't sound like much, but in reality, who are we kidding?  Anyway  I'm going to TRY to post each day, but there will be times I might be MIA for a couple of days, just bear with me and I will catch up.

    One of my goals throughout this 365 is to be able to shoot anything I want to in manual. The next is to have fun capturing this next crazy year of our life. In the next 365 you will see: at least 2 more countries, a HS graduation, an international move to most likely 2 different states, the heartbreak of a mom as she sends her first born off to college and so much more....

    Please make sure you cheer me on after all I am a "Words of Affirmation" girl. :o)
