The sad truth is on Day 48 the only pictures I took were of food - and not very good pictures at that.
This was a new recipe for chicken nuggets I was trying out for the kids after school snack. They didn't go over very well with the kids, but I loved them.
3-4 boneless skinless chicken breast
2 eggs - scrambled in a shallow dish
salt & pepper
2 cups of unsweetened coconut
Cut chicken into bite size pieces
Sprinkle with seasonings
Dip in egg
Coat with coconut
Place on a cookie sheet
Bake for 6 minutes, flip nuggets over and bake for 6 more minutes. (Give or take a few depending on how big your nuggets are.)
